I am writing to make a request for information under the Freedom of Information Act 2000. I would like to request the following information regarding the use of processed meats containing nitrates or nitrites in meals provided by your authority.

1. Does your organisation procure or serve processed meat (such as bacon, ham, sausages, or other cured meats) that contain nitrates or nitrites as preservatives?
• The contracts do not detail the specific ingredients of the products supplied.

2. If so, please provide details of the types of processed meat served and any guidance or policies in place regarding their procurement.
• Burgers, grills, sausages, Breaded or Battered items
• The Contracts specify that the contractors comply with the relevant standards and regulations (ie: School Food Regulations 2014 and Food Standards any subsequent revision or legislation; full traceability of all fresh and frozen meats; for example, by sourcing under Red Tractor Assurance; All fish must be Marine Stewardship Council (MSC) certified and/or feature on the Marine Conservation Society “fish to eat” list, or equivalent;
• The following products listed as NOT permitted:
• Products containing mechanically recovered meat.
• Dehydrated meat products.
• Dehydrated potato.
• The use of textured vegetable protein.
• Spaghetti Hoops in tomato sauce.
• Genetically Modified food.
